Valorització del peix blau per la millora de la competitivitat del sector pesquer

El peix blau és una font de proteïnes, vitamines, minerals i greix insaturat, entre el qual en destaca el contingut en àcids grassos omega-3, que redueixen els nivells de triglicèrids en sang, disminueixen la pressió arterial i augmenten la vasodilatació arterial. Tot i ser considerat un aliment saludable, el seu consum és inferior a altres classes de peix degut, en part, a la seva talla, espinada i poca comoditat a l’hora de manipular-lo. A la Costa Brava, el peix blau representa aproximadament un 70% en volum del total de captures, mentre que suposa únicament un 30% de la facturació total recaptada durant la primera venta a llotja. El present treball s’emmarca dins el projecte que va realitzar l’Institut de Recerca i Tecnologia Agroalimentàries (IRTA) en col·laboració amb el Grup d’Acció Local Pesquer de la zona de la Costa Brava (GALP - Costa Brava) i mitjançant un ajut per a l’aplicació del desenvolupament local participatiu dins el marc del Fons Europeu Marítim i Pesquer (FEMP), amb l’objectiu de valoritzar el peix blau mitjançant el desenvolupament de nous productes elaborats a partir de diferents espècies dins aquest grup. Engraulis encrasicolus, Sardina pilchardus, Sardinella aurita i Trachurus trachurus van ser les quatre espècies seleccionades per a ser caracteritzades i utilitzades com a possible matèria primera per al desenvolupament d’un nou producte. Amb la seva caracterització fisicoquímica es va observar que el contingut de greix en aquestes espècies presenta variabilitat estacional que es pot relacionar amb l’època de posta entre d’altres factors, com ara l’edat, el sexe, l’alimentació i el moviment migratori; i que en ocasions pot arribar a ser inferior al contingut de greix en peix blanc. De la mateixa manera, el perfil lipídic també presentava variabilitat dins d’una mateixa espècie tot i que, globalment, les quatre espècies presentaven una relació omega-6/omega-3 inferior a 4:1 que es pot associar a la prevenció de malalties cardiovasculars i la disminució de símptomes inflamatoris. A la vegada, les mostres de peix amb major contingut de greix eren més riques en EPA i DHA i es podria arribar a cobrir la ingesta diària recomanada per l’EFSA (EPA+DHA >250 mg) amb una sola ració de peix.

The present work is part of the project carried out by the Research Institute and Agri-Food Technology (IRTA) in collaboration with the Local Fisheries Action Group of the area of ​​the Costa Brava (GALP - Costa Brava) and through a grant for the application of the participatory local development within the framework of the European Maritime and Fisheries Fund (EMFF), with the aim of valuing blue fish through the development of new products made from different species within this group.
