La base de todo café es el agua, un ± 94% de esta bebida la construye este componente. Este hecho la pone en el punto de mira, no obstante, no hay muchas empresas de café que inviertan tiempo y dinero en comprenderla y adaptarla a sus necesidades, por lo que este proyecto es innovador y ambicioso. El agua circula por el interior de las cafeteras, y estas, debido a las altas condiciones en que trabajan, sufren muchas averías por precipitación de cal y/o corrosión. Los parámetros que se deben modificar con el fin de obtener una buena taza de café y un mantenimiento de las cafeteras aceptable son la dureza total y la alcalinidad. Estos parámetros se modifican mediante filtros de carbón activo e intercambio iónico. Para poder determinar la capacidad que tiene el agua de corroer o precipitar carbonato de calcio, se calcula el índice de Langelier y Carrier. Este parámetro permite saber cómo se comportará el agua según la temperatura a la que esté sometida
